Indulge in the ultimate breakfast delight with our delectable Carrot Cake Baked Oats recipe!

This dish is a delightful fusion of wholesome oats, luscious carrots, and warm spices, creating a symphony of flavours that will leave your taste buds dancing with joy.

Perfectly meal-preppable and bursting with nutritious goodness, it's a treat you won't be able to resist!

This recipe makes approximately 4 servings. Use an 8x8” (or similar) tin for the measurements below.


  • 2 bananas, mashed

  • 2 cups oats

  • 1 tbsp nut butter

  • 1 carrot, grated

  • 2 tsp cinnamon

  • 1 tsp vanilla extract

  • Pinch of salt

  • 1 tsp baking powder

  • 1 tbsp maple syrup or sweetener of choice (optional)

  • 1-1.5 cups milk of choice

  • 1/3 cup chopped pecans or walnuts (plus more for topping)

  • 1/3 cup raisins or sultanas

  • Greek yogurt for topping


  1. Preheat oven to 180C. Mix all ingredients together and add to a lightly greased 8x8” ovenproof dish (or line with baking paper). I halved the recipe in the video and used a loaf tin.

  2. Bake for 35-40 minutes. Let it cool before topping with yogurt and chopped nuts. Store in an airtight container in the fridge until ready to eat. Enjoy!
