This recipe makes approximately 4 servings. Use an 8x8” (or similar) tin for the measurements below.
Ingredients
2 bananas, mashed
2 cups oats
1 tbsp nut butter
1 carrot, grated
2 tsp cinnamon
1 tsp vanilla extract
Pinch of salt
1 tsp baking powder
1 tbsp maple syrup or sweetener of choice (optional)
1-1.5 cups milk of choice
1/3 cup chopped pecans or walnuts (plus more for topping)
1/3 cup raisins or sultanas
Greek yogurt for topping
Instructions
Preheat oven to 180C. Mix all ingredients together and add to a lightly greased 8x8” ovenproof dish (or line with baking paper). I halved the recipe in the video and used a loaf tin.
Bake for 35-40 minutes. Let it cool before topping with yogurt and chopped nuts. Store in an airtight container in the fridge until ready to eat. Enjoy!
