This super easy, super fast, out-of-this-world super delicious salad is the one to make you popular at the next 'just bring a salad' event.
Jam packed with nutrients, vitamins and minerals contained in such super powered foods as chickpeas, mint, lemons and quinoa, this salad will make you question how something so good for you can actually taste this great. For real.
Recipe:
3 cups cooked quinoa (I made, 1 cup uncooked)
3 mini cucumber, finely chopped
1 cup chopped fresh mint
1/2 cup tightly packed parsley, chopped
1/2 cup tightly packed mint, chopped
1/3 cup chopped red onion
3/4 cup chopped pistachios
2 cups rinsed & drained chickpeas
Juice of 1.5 lemons
1/3 cup extra virgin olive oil
Salt & pepper
1/2 cup of feta
Throw all ingredients into a bowl, drizzle over the lemon and olive oil, mix it up, take a place at the table and get it in your belly!
